Homemade Ginger Cordial

Another quick one. I made Ginger Cordial today – it couldn’t have been easier.

Grate a big chunk (I think I was trying to avoid using the word ‘knob’ there, I’m not really sure why) of ginger into a saucepan, squeeze in the juice of a couple of limes, pour over some granulated sugar – start with say 100g and add more to taste – and then top up with cold water. Bring to the boil and simmer for about 15 mins. Taste and add more sugar or lime if needed. Allow to cool and pour through a sieve into a sterilised bottle ( I only had an enormous one as you can see from the pic).

You probably need a little more than a commercial cordial and it looks a bit cloudier but it’s actually really delicious, it’s spicy and fiery and would be lovely with some fizzy water and a sprig of mint.

I have a feeling it will be rather brilliant with Vodka, soda and lime wedges…
