Courgette Cake with Lime Frosting

I’m not a massive courgette sort of girl – I mean there’s a place for them in a nice ratatouille or battered in a misto-sort of thing – but I can’t say I’ve ever really craved a courgette…. Nevertheless I am always interested in the slightly odd so a courgette cake appealed to me.

I believe Nigella does a good one but mine was a Nigel Slater recipe and it turned out pretty well. It was quite dense but moist – I guess the courgettes add moisture like the carrots in a carrot cake. I really liked it and would definitely make it again. As always, I didn’t quite have everything needed so substituted the Pecans for Walnuts and I added a frosting just because I had some cream cheese in the fridge (mix the cream cheese with the juice and rind of 2 limes and a couple of spoons of icing sugar).
